You had me at rhubarb!! I made us a delightfully flaky rhubarb pie this weekend. I take it as some odd kind of compliment when my children will scoop out the pie filling and eat just the crust. Of course, the filling was lucious, so they were appropriately scolded, but still…

oooohhh. My mom & grandma always made the very yummies rhubarb crisp. Chop up the rhubarb and a dash of water & loads of sugar; boil to a pulp, and layer that with a cinnamon, oatmeal, flour crumble and bake. Deeelish. The edges get that chewy fruit leather thing going and the rest is an ice scream scoop away from the very essence of summer.
